The tenancy model itself should be chosen deliberately, but the decision cannot sensibly be deferred.

It depends on where your customers are, whether you want a merchant of record handling tax and compliance for you, and your pricing model. Stripe is the common default; Paddle is attractive if you want tax handled as part of the service; local providers matter for certain markets. We integrate all of them and advise based on your situation.
